What follows was my attempt to clone Square One's Maple Stout. What I learned was 100-ounces of maple syrup is waaaaaaaaaaaaaaaaay to much. It was to syrupy to drink straight up but if you poured it over a scoop of vanilla ice cream in a pint glass it made an excellent beer float! If you are looking for a beer float recipe, brew as follows. If you looking for a maple stout receipe, cut the initial maple syrup addition down to 8 ounce and then add more to taste.
OG = 1.064 FG = 1.010
Ingredients: •12# Rahr 2-Row Malt •0.75# Black Malt •0.50# Roasted Barley •0.25# Caramel 120 •0.25# Weyermann Carafa III •2.00oz Willamette (60-min) •1.00oz Cascade (15-min) •WY#1332 Northwest Ale
Instructions: A. Mash at 153-deg for 60-min. B. Sparge with enough 168-deg H2O to hit your preboil volume, 6.5 gallon. C. Ferment around 67-deg. D. Secondary 4-weeks. E. At kegging, add 100oz Grade B Maple Syrup (Available at Trader Joe's)
