I made this Sweet Mead last October, bottled January and have been sampling about every month. Very easy to make. It is also very sweet. If anyone is interested in sampling before making, just let me know and I will bring a bottle to the next Brewminati meeting. Here's the recipe/instructions for a 3-gallon batch:
Ingrediants: 9.7# Honey 2-packets Mead Nutrient Blend Wyeast 4184 Sweet Mead Yeast
Instructions: 1) Soak the honey in warm tap water before starting so it will flow out quicker. 2) Fill fermenter with 1.5-gallon room temp Spring water. 3) Add 1-packet Mead Nutrient Blend and stir. 4) Pour honey in fermenter. 5) Boil 1/2-gallon water, pour in empty honey container, shake, and pour into fermenter. 6) Top off fermenter with room temp Spring water to bring total volume to 3-gallons. 7) Stir for about 10-minutes until honey is disolved and then add Wyeast. 8) Stir in the second Mead Nutrient Blend 48-hours after pitching the Wyeast.
